Since you're already using foldables in the classroom you might already know about this book, but <a href="http://www.everythingaboutlearning.com/index.php?cid=199&p=product&id=18297">The Big Book of Books and Activities</a> has a really good selection of foldable projects for the classroom. Might be worth checking out if you haven't already.  :-)
